Health Corner: Five Minute Vegan Hot Chocolate
In some parts of the country, it seems like spring is just non-existent this year. And with the rain Rhode Island is supposed to have this week, we’ll certainly miss the semi-warm weather we briefly experienced last week. But for now, the cold and rain will have to do. On the bright side, this weather is a perfect excuse to stay inside, do homework, maybe nap, and cook! Since winter seems to be never-ending in New England, you might as well make the best of it by making some hot chocolate — better yet, vegan hot chocolate!
Ingredients:
· Almond Milk
· Cocoa powder
· Dairy free semisweet chocolate
· Raw sugar
Directions:
1. Add almond milk to a large mug and microwave for one minute.
2. Once milk is warm, add cocoa powder, chocolate, and sweetener. Use a whisk or spoon to combine.
3. Put back in microwave or continue cooking on stove-top until the mixture is completely combined and has reached your preferred temperature.
4. Taste and adjust sweetness as needed.
5. Add in your extract of choice for a little kick.
6. Cuddle up on your couch, bed, or beanbag chair and sip away!
