Cilantro and Lime Shrimp

With “Rona” season around the corner, I have had a bunch of extra limes laying around my dorm room, and when life gives you limes… you make Cilantro Lime Shrimp. This recipe is easy to make and is healthy. With all your ingredients prepared, the recipe takes less than 10 minutes and makes enough for two people.
For this recipe you will need:
– 10 to 15 medium to large shrimp, cleaned and deveined
– 2 oz. of chopped fresh cilantro
– 1 lime
– 2 – 3 cloves of garlic, pealed and smashed
– 2 tablespoons of olive oil
– Salt and pepper to taste
Instructions:
– In a bowl, combine the shrimp, salt and pepper
– In a skillet, heat the olive oil to a medium-high heat and add the shrimp and garlic. Cook until half of shrimp turns white. Flip the shrimp and continue cooking.
– After you flip the shrimp, add the juice of one lime and the cilantro.
– The shrimp are fully cooked when they are completely white. Remove from heat and serve warm.
